Beautiful Butterfly Cakes 

 

Ingredients

170g (6 oz) butter or margarine

170g (6 oz) sugar

3 eggs

170g (6 oz) self-raising flour 

For butter icing

170g (6 oz) icing sugar

85g (3oz) butter (soft)

3 drops of vanilla extract

1 tablespoon of milk

Preparation method

1. Preheat the oven to 180 C / Gas 4. Line a muffin tin with paper cases.

2. Cream together margarine and sugar till light and fluffy. Add eggs one at a time, beating continuously. Sift in flour and mix gently.

3. Spoon mixture into prepared muffin tin. Bake for 15 - 20 minutes until golden brown and skewer comes out clean.

4. Put on a wire rack. Whilst the cakes cool down you can make the butter icing. Place all the ingredients for the butter icing in a large bowl and stir for about five minutes until all the ingredients are well combined.

5. Get an adult to slice off the top part of each cake with a knife. Cut the sliced-off cake into two, these will be used later to form the wings of the butterfly.

6. Place about a teaspoon full of the butter icing on top of each cake. Then push the "wings" into the butter icing.
